Yayyy, another Elimination Diet friendly recipe win! I've made date balls in the past which are typically walnuts (or pecans, almonds, cashew, etc), dates, and coconut (easy peasy) but hey if I can add more vegetables into my treats then I'm going to, so, here we are! Add a little carrot and cinnamon to these bad boys and your cake cravings disappear, this is what true magic is made of. Honestly after 15 days of the Elimination Diet these truly tasted like candy to me and 1 of these does the trick. I keep them in the freezer as this made a generous batch and they'll last longer, plus they taste yummy chilled.
Ingredients
2 cups Walnuts (or nuts of choice)
2 cups pitted Medjool Dates
1 cup unsweetened shredded Coconut
1 cup shredded Carrot
1 Tbsp cinnamon
1 tsp Vanilla extract
1/2 tsp Sea salt
Instructions
In a large food processor combine walnuts and coconut shreds until crumbly.
Add dates and carrots until well mixed (you may need to help this along if using a smaller processor like I did as it will get sticky, you can add water or coconut oil if needed)
Add cinnamon, salt, and vanilla, process until uniformly blended.
Scoop a spoonful of the dough and place into your hand, roll between your palms to form into balls, place onto a baking sheet lined with parchment paper to be chilled for 30 minutes and then eat (yay!) or transfer into proper storage for keeping (or if you're lazy like me just pop them straight into glassware for the freezing or refrigerating.)
Other Options
Roll these in the shredded coconut for extra fanciness.
Turn these into a brownie treat by combining 1/4 cup cocoa powder instead of carrots (may need to add coconut oil and/or water). Roll in cocoa powder before freezing.
Add oats, dried cherries, ground flax seed, or whatever else your healthy heart desires.
